If you've never been to the Showcase SuperLux in Chestnut Hill it's huge! And gorgeous. Upon arrival we like to head up the escalators and grab a drink at the SuperLux Lounge where they serve up hand-crafted signature cocktails at their full bar in a chic space. Order apps or if art is your thing, this Showcase Cinema location is the only location to feature custom artwork from local artists, I recently attended the opening of Showcase SuperLux' gallery exhibit featuring one-of-a-kind portraits of iconic Hollywood movie stars called "Surreal Hollywood" from artist Lia Burke. You can get a peek at these absolutely stunning works in and around the lounge area.

When you're ready to take your seats and settle in and watch the movie it's the ultimate experience in comfort and convenience; these theaters feature heated, reclining seats with adjustable headrests, cozy blankets to snuggle up with your sweetie (or hide behind during horror flicks), and rotating tray tables with in-seat dining and drink options. Did I mention it's a foodies delight? With a full scratch kitchen their in-seat dining options include decadent bites like Parmesan Truffle Fries and Buffalo Mac and Cheese. It's truly the ultimate movie going experience and a fresh take on the tried and true date night concept.

This simple meal can be easily customized to your tastes, and even works well when served as nachos on corn chips as an easy appetizer. You can even use other variations of Willow Tree Chicken Salad; I used their classic variety but their Sriracha and Avocado Cranberry chicken salads both work nicely with this recipe. While you’re shopping you might notice that Willow Tree products have a new look. I whipped these Summer Totadas up for a Thursday night date night at home; some decorations on the balcony, a pitcher of iced tea, and some tequila shots to spice up the night. I saved the rinds from the limes to serve the tequila in but you can use them to hold individual servings of the Jalapeño Basil Sauce as well. Hope you love this easy to assemble meal as much as I do! And a special thanks to my parents for graciously taste testing my creation while they were in Boston! 



Ingredients:
Tostadas (or corn tortillas and oil to fry your own, 1-2 per person)
1 can refried beans
1 package Willow Tree Chicken Salad (find it here)
Fresh corn (1 ear will serve 2)
1 package Queso Fresco

Jalapeño Basil Sauce:
3/4 Jalapeno
1 heaping tablespoon salad dressing or mayonnaise
3-5 fresh basil leaves
2 cloves garlic
Olive oil to desired consistency

Optional toppings:
Jalapeños
Pepitas
Lettuce
Avocado
Salsa

Sauce Directions:
(Remove the seeds from the jalapeño for a more mild but still flavorful sauce)
Slice and blend ingredients in blender or food processor adding olive oil to taste/desired consistency 

Tostada Directions:
Preheat oven to 350F degrees
Line baking sheet with tostadas
Bake until crisp, approximately 3-5 minutes
Once your tostadas are crisp, prepare the corn
Remove the husks and silk from your ears of corn
Remove the corn from the cob (helpful hints here)
Grill, Pan-roast, or roast your fresh corn in the oven under the broiler on low until browned
Assemble your tostadas; top with refried beans, chilled Willow Tree Chicken Salad, roasted corn, crumbled Queso Fresco, and desired toppings

Ramblerose Co. caught my attention when I learned that designer Maggie Antalek handcrafts each and every one of the pieces she creates. The attention to detail shows; the titanium crystal quartz and vibrant lapis stones in my Savannah statement necklace complement each other perfectly and because she uses natural stones, no two Ramblerose pieces are alike. This bauble was the perfect finishing touch for this date night look! 

Whether you're popping bottles on a Friday night, want to make a wow-worthy impression on a first date, or are going out on the town with the girls, this dress fits the bill. It really speaks for itself so I kept the accessories at a minimum; just a simple crescent moon necklace, nude sandals, and a nude lip complete this look. We started off with the Rarebits (melted farmhouse cheeses, lager, vermont bacon, with toast) and Escargot (seasoned with garlic, shallots, butter, parsley, cognac, and parmesan) which made for delicious and indulgent apps. The Rarebits is served in a warm cast iron skilled which I thought was a practical touch. Not only makes for a pretty presentation, but the cast iron keeps the cheese melty and gooey for much longer than when served in a bowl.


The entrees were tough to pick from! Everything sounded amazing but I had a craving for polenta so I opted for the Rabbit entree (pictured); a prosciutto wrapped tenderloin served with roasted sausage, gorgonzola & caramelized onion polenta. My date chose the Chicken entree; pan roasted, served with risotto, mushrooms, and roasted garlic. The meats were cooked to perfection, which can be a difficult task when it comes to rabbit. While it was a meal heavy on cheese and bread, I wouldn't have it any other way!


We ended the meal with a couple of scoops of their house churned ice cream: blueberry cheesecake and salted caramel! I love all things cheesecake inspired so it was no surprise that the blueberry cheesecake ice cream captured my heart. I had a bite of the salted caramel as well which was equally delicious, if not a bit rich for my tastes.

It was certainly a meal to remember! There aren't too many places in the Boston area that do French cuisine, and do it well. They had me at the Escargot-- the rest of the meal just sealed the deal.
