Moroccan Spiced Salmon with Yogurt and Cucumber Salad

It's been forever since my last recipe post and while I've spent a ton of time in the kitchen since quarantine started, so few of my recipes have made it onto the blog! So without further ado, I present this Moroccan Spiced Salmon served over Farro with Yogurt and Cucumber Salad; swap the farro for your favorite grain or omit it altogether in lieu of seasonal veggies, this fish could be the foundation of so many delicious dinners! 

This dish came together when I discovered New England Country Mart and their grocery delivery service. I was inspired by their fresh, local ingredients and I couldn't wait to get cooking in the kitchen after my latest delivery arrived. With high quality fish from Red's Best and local grains from Maine Grains, I set out to create a flavorful grain bowl that was easy to assemble and could be easily adapted for families of all sizes. Moroccan Spiced Salmon with Yogurt and Cucumber Salad 

Moroccan Spice Mix
1 teaspoon Cumin 
1 teaspoon Ground Ginger 
1 teaspoon Salt 
1/2 teaspoon Black Pepper 
1/2 teaspoon Cinnamon 
1/2 teaspoon Coriander 
1/2 teaspoon Cayenne 
1/2 teaspoon Turmeric 
1/2 teaspoon Paprika

Salmon 
Greek Yogurt 
Cucumbers 
Lemon 
Fresh Mint 
Farro 
Garlic 
Olive Oil 



Directions: Preheat oven to 350°F. Prep farro according to package directions or you preferred ratio. Our preferred ratios 2.5 cups of water or stock to 1 part farro. Pace on medium heat, cover and cook until liquid is absorbed and farro is tender. season to taste with salt, pepper, and a high quality olive oil and set aside. (I am obsessed with this O-Med Molina Arbequina EVOO from NECM! It's pricey but such a beautiful finishing touch to elevate your home cooking). 

Pat salmon dry with a paper towel, then season both sides with Moroccan spice blend. Place on parchment lined baking sheet and bake for 10-15 minutes or until it reaches your desired doneness. Salmon should feel firm to touch. While the salmon is in the oven, prepare the Yogurt and Cucumber Salad. finely mince the garlic, dice the cucumber, and shred mint into small pieces. Fold garlic, cucumber, and mint into the yogurt and season with salt and a squeeze of lemon juice. 
 
To serve, place the salmon on a bed of farro, cover generously with Yogurt and Cucumber Salad and garnish with a few sprigs of mint.
